I consider myself an average cook. If I search for a recipe on-line, I usually include the words “easy” or “simple”. Also, “Crockpot”, but that’s a post for a cooler season.
I was inspired by an article in the July 2014 edition of Bon Appetit magazine. They let me subscribe, even though I don’t even own any Maldon sea salt flakes.
Usually when Bon Appetit says “simple” it only involves a days-long brining process and an exotic fruit from Indonesia that I can’t get at the Piggly Wiggly.
This recipe, called the “Blank-Canvas Dessert” really was a simple and easy summer dessert recipe that only really needs four ingredients–so simple I can send a kid to the store to pick everything up.

Simple Summer Berry Tart Recipe
Ingredients:
1 sheet frozen puff pastry.
1 pint fresh berries. I used blueberries, but any berry will do.
1/4 cup sugar
Reddi-wip
Preheat oven to 425 degrees. Allow sheet of puff pastry to thaw a little, then unroll onto baking sheet lined with Silpat or parchment paper.
Cut pastry into six even rectangles and move them a little apart on the baking sheet. Roll up the edges of the dough a little, then prick the pastry all over with a fork.
Rinse and dry berries. I used my salad spinner! Toss the berries with the 1/4 cup of sugar.
Add a single layer of sugar-coated berries onto each pastry section. Pop into preheated over for ten to fifteen minutes, then rotate baking pan and bake for another ten minutes. Each pastry should be puffed and deep golden brown.
Cool on the baking sheet until room temperature. That takes at least twenty or thirty minutes.
Plate and top with a generous dollop of Reddi-wip. A serving is only 15 calories, so have two.
Recipe serves six.
